Ingredients

  • Tofu: 250 g
  • Brown rice: 1 c
  • Tamari: 4 tbsp
  • Peanut butter: 1 tbsp
  • Maple syrup: 2 tbsp
  • Chili garlic sauce: 1-2 tsp
  • Toasted sesame oil: 1 tsp

Method

1.

Preheat oven to 200 °C and line a baking sheet with parchment paper.

Meanwhile, wrap tofu in a clean, absorbent towel and set something heavy on top to press out the liquid.

Once the oven is preheated, dice tofu info 0.5 cm cubes and arrange on baking sheet. Bake for . You're looking for golden brown edges and a texture that's firm to the touch. Adjust baking time for desired crispiness. Set aside.

While the tofu bakes, cook brown rice according to directions.

While the rice and tofu are cooking, prepare sauce by adding tamari, peanut butter, maple syrup, chili garlic sauce and toasted sesame oil to a medium-size mixing bowl and whisk to combine.

Once the tofu is done baking, add directly to the sauce and marinate for , stirring occasionally.

Heat a large metal or cast iron skillet over medium heat. Once hot, use a slotted spoon to scoop the tofu into the pan, leaving most of the sauce behind. Cook for , stirring occasionally, until deep golden brown on all sides. Lower heat if browning too quickly. Remove from pan and set aside.

To the still hot pan, add garlic, green onion, peas and medium carrots. Sauté for , stirring occasionally, and season with tamari.
